Mini 3/4 bone rack of Welsh Lamb from Cardiganshire, where the lambs graze in a field right next to the coast. The lamb is raw, and has been marinated in wild herbs and extra Virgin olive oil for 7 days. It comes with a pack of ready cooked minted Cous Cous to complement the sweetness of the meat. Pan fry the rack skin side down until coloured and place in a hot oven for 7 minutes for serving pink. Always rest the meat for the same time you have cooked it. Serve the Cous Cous chilled or warm up in the microwave for a minute just to take the chill out of it. Serves one hungry person.
