One Ravioli made from young new season Grouse, Guinea Fowl, Truffle, Ceps, lightly cooked and ready to heat up, served with a disc of Foie Gras Torte and a Game Consommé containing finely diced vegetables.
Heat the Consommé till simmering and cover and take off the heat. Drop in the Ravioli and turn once, leaving to warm through. Serve Torte in a bowl, with Ravioli on top and pour over the rest of the hot Consommé.
Serve as a starter, or light main course with a selection of greens: although quite small, this classic dish is deliciously rich and luxurious enhanced with the Foie Gras.
